Instructions:
1. Preheat the Oven
- Preheat your oven to 400°F (200°C). Grease a large baking sheet or roasting pan with non-stick cooking spray or olive oil.
2. Prepare the Potatoes
- In a large mixing bowl, toss the diced potatoes with olive oil until evenly coated.
- Season the potatoes with salt and pepper to taste.
3. Roast the Potatoes
- Spread the seasoned diced potatoes in an even layer on the prepared baking sheet or roasting pan.
- Roast in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and crispy on the edges.
4. Add the Broccoli and Onion
- Remove the baking sheet or roasting pan from the oven.
- Add the broccoli florets and diced onion to the roasted potatoes, tossing to combine.
- Return the pan to the oven and roast for an additional 10-15 minutes, or until the broccoli is tender and slightly charred.
