2 cups Milk

½ cup Warm Water
¼ cup Melted Butter

450 grams (1 lb) Mushrooms, sliced (cremini, portobello, or a mix)
1 Onion, chopped
1 clove Garlic, minced
Salt and Pepper to taste

3 tablespoons Flour
2 cups Milk
½ teaspoon Nutmeg
½ teaspoon Salt

Instructions:
Make the Crepe Batter:
In a large bowl, whisk together the eggs, salt, and sugar.
Gradually whisk in the milk and flour until smooth. There may be a few small lumps, but that’s okay.
Stir in the warm water and melted butter until combined.
Let the batter rest for at least 30 minutes at room temperature. This allows the gluten in the flour to relax, resulting in thinner and more pliable crepes.
