**Ingredients:**
– 2 medium zucchini, grated
– 2 medium potatoes, grated
– 1 small onion, grated
– 2 eggs
– 100g plain flour
– 1 tsp baking powder
– 1 tsp salt
– 1/2 tsp black pepper
– 1/2 tsp ground paprika
– 2 tbsp chopped fresh parsley (optional)
– Olive oil or vegetable oil for frying
**Procedure:**
1. **Prepare the vegetables:**
– Grate the zucchini and potatoes and place them in a colander. Sprinkle with 1 teaspoon of salt and let sit for 10 to 15 minutes to drain excess water.
